Vegan Snickerdoodles Recipe

2 3/4 cups All-purpose Flour
2 teaspoons Cream of Tartar
1 1/2 cups Unbleached Sugar
1 teaspoon Baking Soda
1 cup Vegan Margarine, softened
1/4 teaspoon Salt
1/4 cup Sweet Potato Baby Food
2 teaspoons Cornstarch
1/2 teaspoon Brandy Extract (optional)
1/2 teaspoon Rum Extract (optional)
1 teaspoon Vanilla Extract

SUGAR MIXTURE
1/4 cup Unbleached Sugar
1 teaspoon Nutmeg
1 teaspoon Cinnamon

Preheat oven to 400 F.

In 3-quart mixer bowl, combine all cookie ingredients. Beat at low speed, scraping sides of bowl often, until well mixed (2 to 4 min). In small bowl, combine sugar mixture; stir to blend. Shape rounded teaspoonful of dough into 1″ balls; roll in sugar mixture. Place 2″ apart onto ungreased cookie sheets. Bake near center of 400 oven for 8 to 10 min. or until edges are lightly browned.
