Vegan Dark Chocolate Fudge Cookie Recipe
1 1/2 cups All-Purpose Flour
3/4 cup Cocoa Powder
6 tablespoons Sweet Potato Baby Food
1 tablespoon Cornstarch
1 teaspoon Baking Soda
1 teaspoon Salt
12 ounces Tropical Source Dark Chocolate Chips
1 1/2 cups Light Brown Sugar, packed
3/4 cup Vegan Margarine
1 teaspoon Pure Vanilla Extract
Sift flour, cocoa, soda, and salt together and set aside.
Melt chocolate chips in double boiler.
Cream margarine with light brown sugar, then add baby food, cornstarch, and vanilla to this mixture. Add the melted chocolate next, and after that is completely mixed, add the dry ingredients. Mix well. Bake for 18-22 minutes in a preheated 325 degree oven.
