Easy No Bake Vegan Peanut Butter Cookie Recipe
These easy, addictive treats will satisfy your cookie craving without the fuss of baking something in the oven. Perfect for warmer weather, or for any time you want to make a super-quick dessert!
2 cups Oatmeal
1 cup Peanut Butter
2 tablespoons Vegan Margarine
1 cup Unbleached Sugar
1 cup Brown Sugar
1 tablespoon Vanilla
1 cup Vegan Chocolate Chips or 1/2 cup Cocoa Powder (optional)
1-2 tablespoons Soymilk (or other non-dairy milk)
In a medium saucepan over low heat, or in a microwave, heat the margarine and peanut butter until they are soft enough to stir (but not melted).
Remove from heat and stir in oats, sugars, vanilla, and optional cocoa/chips. If mixture appears too dry, add a spoonful of non-dairy milk at a time, stirring after each addition. Be careful not to add too much liquid, or the cookies won’t harden!
Drop dough by tablespoon onto an ungreased cookie sheet or wax-paper lined plates. Allow cookies to harden; when you can pick one up and it doesn’t fall apart/stick to the pan, they’re done!
Makes 2-3 dozen, depending on how big you make them.
